The full recipe below:⬇️ Ingredients (3-4 servings): • 175g guanciale (or pancetta) • 120g of Pecorino Romano cheese • 4 egg yolks + 1 whole egg • 5g black pepper • 250g spaghetti • Salt (for pasta water) Instructions: 1. Cut the guanciale (or pancetta) into small pieces. Cook in a cold pan over medium heat until crispy and golden. Remove from heat and set aside, keeping some of the fat. 2. Finely grate Pecorino Romano. 3. Toast black pepper in a pan for 2-3 minutes, then crush it to release the flavor. 4. In a bowl, mix the grated cheese, egg yolks and 1 whole egg, black pepper, and a little of the cooked fat. Mix until smooth. 5. Boil spaghetti in salted water until al dente.
