Chicken Caprese Quinoa Meal Prep * 2 large chicken breasts * 1 cup uncooked quinoa * 2 cups bone broth * 2 tbsp balsamic glaze * salt + Pepper * garlic powder * 1.5 cups cherry tomatoes, cut in half * 1.5 cups mozzarella balls cut in 4ths * ½ cup chopped up basil Dressing: 1/4 cup olive oil 2-3 tbsp balsamic vinegar 2 tsp honey 1 tsp dried basil seasoning 1 tsp lemon pepper 1 tsp garlic powder 1/4 tsp salt 1/4 tsp pepper 1. Cut up chicken and season with garlic powder, salt, pepper, and balsamic glaze 2. Add diced chicken to a pan with olive oil and cook until no longer pink 3. Chop up tomatoes, mozzarella, and basil 4. Add quinoa to a pot with bone broth and cover. Simmer over medium heat for about 8 minutes until quinoa is cooked. 5. Mix together ingredients listed above for dressing
