You can do this on the grill or in the oven… whatever you choose, your result will be light, flavorful, and tender. Full recipe below… 1 lb of washed and cut asparagus (or any veggie, see note) 1/4 cup chopped fresh dill 1/2 lemon juiced 1-2 tbs olive oil salt & pepper to taste Preheat oven to 350 Place vegetables in a single layer on a large sheet of foil Sprinkle dill, olive oil, lemon, salt and pepper Wrap foil tightly and bake for 15 minutes NOTE: adjust cook time depending on your vegetables. Sofia Misabishvili on Instagram: "Artichokes with Garlic and Thyme Ingredients (Serves 2-3): • 3 medium artichokes • 4 tbsp olive oil • Salt, to taste • 2 garlic cloves, unpeeled • A few sprigs of fresh thyme • 2 lemons Instructions: 1) Prepare the Artichokes: ◦ Trim off the tough outer leaves of each artichoke until you reach the tender, lighter-colored inner leaves. ◦ Cut off the top 1/3 of the artichoke (where the leaves are toughest). ◦ Scoop out the hairy choke (the fuzzy center) with a spoon, leaving the heart intact. ◦ Rub the cut surfaces with half a lemon to prevent browning. 2) Soak the Artichokes: ◦ Fill a bowl with ice-cold water and squeeze the juice of 1 lemon into it.
