Costco is selling a 72-pound cheese wheel of Parmigiano Reggiano. The gigantic Parmesan cheese wheel is $900 and, believe it or not, that’s not a bad deal. It comes out to $12.50 per pound, which is comparable to smaller portions. The cheese is aged 24 months and is imported from Italy. It’s also described as “extravagant.”

Parmigiano Reggiano: arguably one of the greatest cheeses ever created. The make process is one of the most sophisticated in the world, & its name designation & standards are protected & regulated by EU law. It shows in the flavor, alternately buttery, nutty, fruity, & always saliva inducing. This cheese adds a nuance and depth when grated onto a dish, and is resplendent eaten alone; as a condiment in Italian cuisine it is third only to salt and pepper; alone it is one of the titans of cheese. These stuffed mushrooms are a classic party staple given a savory twist. The seasoning in Italian sausage makes them especially flavorful, and using hot Italian sausage really gives the stuffing zing. Italian turkey sausage can be substituted, however, use only Parmigiano Reggiano cheese for the tastiest results (and use 24-month-old Parmigiano Reggiano for optimum flavor). The stuffing can be made and the mushrooms filled in advance; refrigerate them until ready to bake.
