🌸 SUMMER EATS SERIES 🌸

Whatever season we're in, there's ALWAYS a space for pies and this one definitely deserves a space in my Summer Eats Series. The filling is creamy, light, fresh and slightly tart bringing that taste of summer. Topped off with light and crispy filo pastry, this is the perfect chicken pie for summer.

Ingredients:
1kg chicken thigh cubed
2 medium onions diced
Salt to taste
1 tsp black pepper
1 tsp smoked paprika
1 tsp garlic granules
1 tsp thyme
1 tsp parsley
25g butter
3 tbsp flour
1 chicken stock cubed in 250ml boiling water
1 measuring cup double cream
1/3 cup greek yoghurt
200g spinach
200g feta
Large filo sheets roll
50g melted butter

Method:
