Grandma's Easy Recipes - Haloumi, Pomegranate and Rocket Salad Ingredients: 200g haloumi cheese, sliced 4 cups rocket (arugula) ½ cup pomegranate seeds ¼ red onion, thinly sliced ¼ cup toasted pine nuts or chopped walnuts (optional) 1 tbsp olive oil (for frying) Dressing: 2 tbsp olive oil 1 tbsp balsamic vinegar or pomegranate molasses 1 tsp honey Salt and pepper, to taste Instructions: Heat 1 tbsp olive oil in a frying pan over medium heat. Fry haloumi slices for 1–2 minutes per side until golden. Remove and set aside. In a large bowl, combine rocket, pomegranate seeds, red onion, and nuts if using.
