2 cups baby potatoes, halved 🥔
2 carrots, sliced into sticks 🥕
1 zucchini, sliced into rounds 🥒
3 tbsp olive oil 🫒
3 garlic cloves, minced 🧄
1 tsp dried oregano 🌿
1 tsp dried thyme 🌱
Salt & pepper, to taste 🧂

1️⃣ Preheat oven to 200°C (400°F).
2️⃣ Toss potatoes, carrots, and zucchini with olive oil, garlic, oregano, thyme, salt, & pepper.
3️⃣ Spread on a baking tray in a single layer.
4️⃣ Roast for 25–30 mins, flipping halfway, until tender and golden.
