Over the past few years I have come to love rhubarb salsa. It. is. scrumptious. Tart, spicy, sweet, and addictive. Make sure you don't skimp on the ginger or the honey in this recipe -- they make the rhubarb flavor shine! Recipe courtesy of Restocking the Pantry. Makes approximately 2 1/2 cups.

• 1/2 Green bell pepper
• 1 Jalapeno peppers
• 1/2 Red onion, small
• 7 stalks Rhubarb
• 1/2 Yellow onion, small

• 3 tbsp Lemon juice

• 1 tsp Sea salt

• 1 tablespoon orange zest (from approximately 1 orange)
