We're loving this simple, yet gorgeous, herby, Chickpea, Beet and Feta Salad by @gayanefood.
Look at how all of the colors pop! Who's going to make this tonight? You could even batch make this and make enough for leftovers with the hearty ingredients.
Instruction :
* 1x 400g tin of chickpeas, drained
* 300g cooked beetroot, diced
* 1/2 large cucumber, diced
* 150g feta cheese, diced
* 80g pitted olives (optional)
* 1 red onion, finely chopped
* 30g fresh dill, chopped
* 40ml olive oil
* Juice from one lemon
* Salt and pepper to taste
In a large bowl, toss together all the ingredients. Season with salt and freshly ground black pepper. Drizzle with olive oil and freshly squeezed lemon juice. Toss and enjoy!
