In a large bowl, combine the diced eggplant, zucchini, yellow squash, red bell pepper, yellow onion, and minced garlic. In a separate bowl, whisk together the diced tomatoes, tomato paste, thyme, oregano, salt, black pepper, and olive oil. Pour the tomato mixture over the vegetables and stir to combine.
