Creamy Mushroom Chicken & Wild Rice Soup - Comfort in a Bowl 🍲🍄
Ingredients: 2 tbsp butter 1 lb mushrooms, sliced 1 tbsp butter 1 onion, diced 2 carrots, diced 2 stalks celery, diced 2 cloves garlic, chopped 1 tsp thyme, chopped 6 cups chicken broth 1 cup wild rice (or blend) 1½ cups cooked chicken, diced or shredded 1 cup milk or cream 1 cup Parmigiano Reggiano, grated Salt and pepper to taste Instructions: Melt 2 tbsp butter in a pan over medium-high heat. Cook mushrooms until liquids evaporate, about 10-15 mins. Set aside. Melt another tbsp butter in the same pan; sauté onion, carrots, and celery until tender, about 8-10 mins. Add garlic and thyme, cook 1 min until fragrant. Pour in broth, add wild rice, chicken, and mushrooms. Bring to a boil, then simmer for 20-30 mins until rice is tender.
