📑 Ingredients: Eggplant Tomato spices Grated cheese Good quality ham or turkey black olives Cherry tomatoes Or whatever toppings you want 🥣 Preparation: 1. Wash the eggplant and cut it into approximately 1cm slices. 2. Place them on a baking tray with a little oil and salt and bake for 15 minutes at 180°C. 3. We're loving this simple, yet gorgeous, herby, Chickpea, Beet and Feta Salad by @gayanefood. Look at how all of the colors pop! Who's going to make this tonight? You could even batch make this and make enough for leftovers with the hearty ingredients. Instruction : * 1x 400g tin of chickpeas, drained * 300g cooked beetroot, diced * 1/2 large cucumber, diced * 150g feta cheese, diced * 80g pitted olives (optional) * 1 red onion, finely chopped * 30g fresh dill, chopped * 40ml olive oil * Juice from one lemon * Salt and pepper to taste In a large bowl, toss together all the ingredients. Season with salt and freshly ground black pepper. Drizzle with olive oil and freshly squeezed lemon juice. Toss and enjoy! Save this recipe for your next batch cooking session! Repost : @gayanefood
