📑 Ingredients: Eggplant Tomato spices Grated cheese Good quality ham or turkey black olives Cherry tomatoes Or whatever toppings you want 🥣 Preparation: 1. Wash the eggplant and cut it into approximately 1cm slices. 2. Place them on a baking tray with a little oil and salt and bake for 15 minutes at 180°C. 3. Instruction : * 1x 400g tin of chickpeas, drained * 300g cooked beetroot, diced * 1/2 large cucumber, diced * 150g feta cheese, diced * 80g pitted olives (optional) * 1 red onion, finely chopped * 30g fresh dill, chopped * 40ml olive oil * Juice from one lemon * Salt and pepper to taste In a large bowl, toss together all the ingredients.
