Teriyaki Salmon Sushi Bowl Ingredients: 1 lb salmon fillet, cut into cubes 1/4 cup teriyaki sauce 1 tbsp soy sauce (low sodium) 2 cups cooked sushi rice 1 avocado, sliced 1/2 cucumber, thinly sliced 1/2 cup shredded carrots 1/4 cup edamame, shelled 1 tbsp sesame seeds 2 green onions, sliced Pickled ginger, for serving (optional) Instructions: Marinate salmon in teriyaki sauce and soy sauce for 15 mins. Cook salmon cubes in a skillet over medium heat for 3-4 mins per side, or until cooked through. Divide sushi rice into bowls, then top with salmon, avocado, cucumber, carrots, and edamame.
